Christmas Crunch
Directions
Preheat oven to 250 degrees
In a small saucepan, heat the coconut oil and honey on low until coconut oil is melted. Stir in vanilla. Pour wet mixture over the nut mixture and mix well.
Press mixture onto a greased rimmed baking sheet and bake for an hour, turning the baking sheet around at the halfway mark. Remove from oven and let cool completely. Break apart and store in a clean glass jar.
